Restani kumpir

I am sure this dish is derived from the tradition of Austrian or German cuisine, but I have no idea how it is called in any other language apart from my dialect. Still, you know that a combination of caramelized onions and boiled crushed potatoes cannot be bad.

Restani kumpir

Boil about 600 g of floury potatoes in their skin, for about 35 min. When ready, peel them and slice into thick slices. In the same pot the potatoes were cooking, heat sunflower oil to just below smoking point. Add diced onions and fry, stirring vigorously for a minute or so, until the onions are slightly brown. Add the potatoes to the pot, a generous sprinkling of salt and pepper, and stir, crushing the potatoes further.

Enjoy as a side to roast chicken or boiled beef.
