We had this the other day for dinner: lovely, quick, and cheap.

Heat the oven to 200˚C.

For a 23 cm frying pan, thinly slice two potatoes and two onions and sauté them in olive oil, with a generous seasoning of salt and some smoked bacon cubes. When the potatoes are starting to brown slightly, add sliced zucchini and continue sautéing.

Break 9 eggs in a bowl, season with salt and stir to homogenise the eggs. Pour in the frying pan, dot with Gruyere cubes and bake in the oven for 10 to 15 min, until golden brown.
