Is this the cutest cookie ever? I should think so!
This cookie is made from pâte sablée. Apart from the special cookie cutter (acquired in a very speedy visit to a cookery shop in München), you will need patience, as the dough needs to be really cold when you cut it.
What I do is roll out the pastry and then put it in the fridge for 45 min. After making cookie cutter marks, I return the dough to the fridge for another 45 min, and only after that do I remove the shaped cookie.
I baked these at 180˚C for about 15 min.
