This is sauerkraut, my way. The recipe is made from memory of what I remember my Dad cooking.
Sauerkraut
Sauté onion with cubes of smoked pancetta. Add 500 g sauerkraut, 4 dried bay leaves, and about 200 mL water. Bring to boil and cook until almost all the water has evaporated, about 30 to 45 min.
