Basler Läckerli ice cream

I enjoy making ice cream at home because I can make various flavours that the great gods of Nestle did not yet remember to put on offer. One of the flavours that has become a firm favourite Basler Läckerli ice cream.

Basler Läckerli is a type of cookie that has various spices and dried fruits added to it. It was created back in the day when it was important to preserve cakes for long periods of time, and is consequently dry as a shoe sole. Still, the flavour is nice (if you manage to chew it).

What is wonderful is how a few diced cookies transform ice cream base into an explosion of flavour.

You will need an ice cream maker for this recipe. It is a small investment that inevitably brings joys to my guests at dinner, and I never regretted getting one. The base recipe I use is the one that came with the ice cream maker.

Ingredients

  • 250 ml full-fat milk
  • 2 eggs
  • 100 g sugar
  • 500 ml whipping cream (35% fat content)
  • 7 Basler Läckerli cookies, chopped into very small pieces

Instructions

  1. Warm the milk to 80˚C. Meanwhile, mix together the sugar and the eggs. When the milk is warm, slowly add it to the egg mixture, mixing all the time. Return the mixture to the pot and heat to a temperature of about 75˚C. Keep at this temperature for about 20 min to half an hour.
  2. Cool the mixture quickly (e.g., in a cold bath) and add the unwhipped whipping cream. Cool in the fridge until needed.
  3. When you start churning the ice cream, add the chopped cookies and continue churning the ice cream according to the manufacturer’s instructions.
