This weekend, the Aunts from the Netherlands1 visited us, and this was a nice opportunity for me to unwind with some nice cooking. The goal was to have really nice food, straightforward to make, and be in the general Mediterranean area with respect to the flavours. The one constraint we had was that one of the Aunts is vegetarian, so we had a vegetarian option with every meal.
Friday dinner
- Tomato soup
- Green risotto
- Cucumber, pepper, onion, and tomato salad
- Pear and chocolate cake
- Fudge and coffee/tea
Green risotto
Sauteé onions, celery, and garlic on olive oil. Add diced zucchini. Add 400 g rice and toast it. Add a splash of wine, stock cube, and seasoning, and continue cooking and adding boiling water until the rice is cooked, for about 15 min. Mid-cooking, add some frozen spinach. Finish with parsley, a knob of butter, and grated parmesan.
Saturday breakfast
- Birchermüsli with rolled oats, grated apple, Greek yogurt, cinnamon, pine nuts, raisins, and fresh nectarines
- Croissants
- Cheese, butter, jam, and bread
- Orange juice, milk, and coffee
Saturday dinner
- Meatballs with rigatoni
- Beet tarte Tatin
- Mixed salad: lamb’s lettuce, gem lettuce, radishes, and spring onions
Sunday breakfast
- Blueberry American pancakes
- Croissants
- Cheese, butter, jam, and bread
- Orange juice, milk, and coffee
