It has been quite a long week, and some very long weeks are coming up, so I was looking forward to the opportunity to lose myself in cooking. We have guests, so this is a good excuse to make copious amounts of food.
I often find myself cooking for a diverse crowd. Because I want everyone to feel comfortable, I almost always end up cooking two mains. Today’s dinner is no exception.
Primo: Amarone risotto with a quenelle of mascarpone on top.
Secondo: baked pumpkin / braised beef.
Contorni: cucumber, tomato, and onion salad / hasselback potatoes with goose fat.
Dessert: pear and chocolate tart.
